Winemaking

 

We strive to bottle wines that are site driven and reflective of the vintage.  To make this possible we keep our approach in the winery simple:

- working with cool climate vineyards that reach ripeness at lower sugar levels and retain natural acidity

- using high percentages of whole clusters during fermentation when the vintage allows

- fermenting with ambient and native yeasts, allowing native ML

- using almost exclusively neutral French oak barrels

Since each year presents something different, we are never dogmatic in our winemaking approach. The growing season will always dictate the decisions we make in the cellar.
